Welcome to November! While Halloween and Christmas are big stars, I personally like to take November to remember who and what I'm thankful for. Sure we can be thankful year round, but sometimes it's nice to focus on that thankfulness. 

This community that we have formed at the market is amazing and supportive! The vendors all bring their best each week. They have put their hearts into this market as much as Andrea, Andreas, Lacey, and I have! I am so incredibly grateful that I am part of a market making sure the community has what they have asked for. This week Loy’s is bringing sweet potatoes, tomatoes, cucumbers, onions, plums, mangoes, apples, oranges, collards, turnips, rutabaga, lemons, cabbage, and bell peppers.

This week I am doing the recipe differently. It’s not a link, it’s a personal recipe that my family loves. It’s simple and full of options. We call it a sheet pan meal, but really it is just a bunch of vegetables and possibly meat or pasta all roasted in a pan. You have minimal clean-up and most everyone is happy to have a meal they got a say in choosing. The sizes matter in how you cut them up so that they all cook evenly.

Roasted Veggies

Set your oven to 400°F. Wash all your vegetables before cutting or peeling.

You’ll need a pan, olive oil (or other oil you like), vegetables, and shredded chicken or sliced kielbasa (optional).

2 peeled sweet potatoes chopped small

2 to 3 rutabaga roots chopped small

2 bell peppers chopped into large chunks

2 apples chopped into large chunks

1 onion cut into wedges and separated

¼ cup your choice oil

2 Tbsp seasoning of your choice (I like Montreal steak seasoning or Italian seasoning)

2 tsp salt if your seasoning does not have salt included

Optional is a 1 lb of meat of your choice


Chop all your veggies, and toss in the oil of your choice and throw in the seasoning making sure it’s evenly spread out. Your oven should be preheated well by now, so pop in the oven for about 20 minutes or until the potatoes are done. (That can sometimes take longer.) Remove from the oven and enjoy!
